Spread grain or seed evenly over the inner mesh tray and place the tray into the wheatgrass box with enough water to cover the seeds. Soak overnight, then pour the soak water away and rinse the seeds twice a day. Alternatively soak the seeds overnight in a sprout jar, rinse twice a day until they sprout and then spread the sprouted seeds over the mesh. Keep some fresh water in the box for the roots to grow into.

Place a lid, or a second wheat grass or rinse box, over the top to block out the light until the grass has grown at least two inches/ 5 cm tall. Then remove the lid.

Rinse the seeds by dipping the mesh tray in a rinse box filled with water, or by holding the tray under a running tap. Do this twice a day until the grass is ready to harvest - at around 6 to 8 inches / 15 to 20 cm tall.

After you have harvested your crop of wheatgrass, simply slice the roots off the bottom of the mesh tray with a knife and the remains of the cut grass come away easily. You can even juice the roots along with the grass to increase the juice yield. The roots are also very nutritious and their mellower flavour tones down the strong taste of the wheatgrass juice.
