The Ecowater 800 boils the water in the stainless steel lined kettle, killing bacteria and viruses. Steam rises leaving behind over 99% of impurities which remain as a sludge that is rinsed out of the kettle at the end of the cycle. The rising steam is condensed in a stainless steel coil and collected in a carafe with a stop-and-serve valve. The lid of the carafe contains a carbon post-filter that gives the distilled water a final 'polish' to remove any contaminant with a similar boiling point to water and to improve the taste.
