Modern agricultural methods are now delivering grain and flour that is not as pure and natural as many of us would wish it to be. Artificial fertilisers are used in practically all farming, while pesticides are used during both growing and storage of most grains. The ripening process is also foreshortened and modern strains of grain are bred for their response to chemical fertilisers, as well as for their high gluten content.
