Modern agricultural methods are now delivering grain and flour that is not as pure and natural as many of us would wish it to be. Artificial fertilisers are used in practically all farming, while pesticides are used during both growing and storage of most grains. The ripening process is also foreshortened and modern strains of grain are bred for their response to chemical fertilisers, as well as for their high gluten content. Furthermore, finely ground flours oxidise too quickly.
With your own mill or flaker you can be selective. You can buy grain that has been properly ripened from an organic farm growing an old breed. You can avoid oxidation by fresh milling or flaking and using coarser grists. You can also give your body a change by using different grains. Rye, oats, maize, rice, millet and buckwheat, as well as pulses, lentils and chick-peas can all be used to your nutritional advantage.
