Spiralizers - also known as vegetable spiral slicers or garnishing machines - can transform courgette, butternut squash, carrots, cucumbers, beets, parsnips, daikon radish and celery root into delicate angel hair "pasta" or spiral curls. Popular amongst raw foodists who use vegetable noodles in place of cooked pasta so all of the fresh nutrition and life-giving enzymes are retained. The vegetable noodles can also be lightly steamed or fried and still retain some nutrients.
RAW FOOD RECIPE: Peel 1 courgette and make it into "noodles". Toss the noodles in 2 tablespoons of fresh Pesto or Marinara Sauce. Eat as is, or warm the sauce gently on the stove for a minute first. To make Marinara Sauce blend in a food processor or a blender - 1 ripe tomato chopped, 1/2 cup sun-dried tomatoes soaked or oil-packed, 1/2 red bell pepper chopped, 2 tablespoons extra-virgin olive oil, 1 tablesppon minced fresh basil or 1 teaspoon dried, 1 teaspoon dried oregano, 1 clove garlic crushed, 1/4 teaspoon sea salt, dash black pepper, dash cayenne.
