Raw broccoli fights cancer.
Scientists at the University of Illinois say their studies show that raw broccoli contains small amounts of a potent chemical that inhibits the oxidising enzymes that damage DNA and could cause cancer.
According to a report in New Scientist magazine, researchers analysed broccoli by crushing it up to mimic chewing and tested the mush. They found that when broccoli is chewed it releases a class of chemicals known as sulphoraphanes.
Sulphoraphanes that have an extra sulphur atom in each molecule are anti-carcinogenic. Of the sulphoraphanes found in normal supermarket broccoli, 20 per cent were found to be anti-carcinogenic, the researchers say.
They discovered that heating broccoli increases the relative number of anti-carcinogenic sulphoraphanes. Warming the vegetable to 60°C destroys a protein called ESP which increases the proportion of the type of sulphoraphanes that have no cancer-fighting ability.
However, cooking broccoli conventionally does not help because the enzyme that produces sulphoraphanes in the first place is also destroyed.
The researchers suggest eliminating the genes that control the ESP protein in order to ensure high levels of the beneficial compound. This could be done by making hybrids with wild strains or gene splicing.
Sara Risch, a food technology advisor with the US-based food science consultancy Science by Design, says the study is one of many that are important for building knowledge of immune-enhancing food. "But this broccoli research identifies something that could be taken to the plant breeders," she says.
Research has also been undertaken into the potential health benefits of cranberries and soybeans. However it has proved less conclusive.
